I’m a big believer in having your cake and eating it too. I love healthy food that doesn’t taste so darn healthy. These flourless black bean brownies are fudgy, low in sugar and decadent, all while providing fiber, iron, antioxidants and magnesium. IN A BROWNIE, PEOPLE!
I am blessed to have girlfriends who plan amazing get-togethers on the regular, all I have to do is show up with a dessert like this (and wine) and we’re all set. These make the perfect indulgent, yet guilt-free treat. (adapted from the Minimalist Baker vegan recipe)
BLACK BEAN BROWNIES
1 15 oz. can rinsed & drained black beans
3 tbs. melted coconut oil
3/4 cup cocoa powder (I used Ghiradelli sweetened)
1/4 cup raw sugar
1 tsp. vanilla
1 1/2 tsp. baking powder
1/4 tsp. kosher salt
Mix above ingredients in a food processor until smooth. Should be the consistency of cake batter. Spoon into mini-muffin tins with liner.
I topped with
1/8 cup chopped raw cashews
1 tbs. cacao nibs
but you could top them with whatever nut combo you fancy.
Bake at 375 degrees for 25 minutes. Voila! Healthy brownies. 🙂
